Inventory accounts setup

Hi,
I would like to ask please :
on what level (Inventory organization, subinventory,inventory item,etc) in Inventory module do we define each of the following accounts:
-Inventory provisions:
-clearing account-expenses
-accruals -overheads
-material overheads
