Is it possible to create a sales order using item category, instead of the item number...

i think you can but define it in your price list by item category not item number and don't forget your uom and value

Hope you can't create sales orders using only Item Categories but you can define price for a particular category. So, that whenever you create Sales Order system will pick up the price of corresponding item category price which you set up in the price list.

Because If you are able to create Sales Order using Item category then how system will Deplete inventory.

Against which item Code ? Just think.

You can create Blanket Sale Agreement based on item category and then release it from sale order interface.
